Festive Greetings avid readers!!

We are once again honouring a team member..the one person that has stood out as contributing that little bit extra, and I am delighted to announce that the winner of this pretegious accolade is once again the lovely Tanisha Williams – Conference & Banqueting Supervisor!

Tanisha Williams team member of the month for November

Tanisha is one of our long serving employees and works tirelessly along side the Conference & Banqueting Manager Antonio, making sure that everyone attending functions, be it Birthday party, wedding reception, hen night etc has the very best of service.  Her attention to detail is seconf to none!  Her favourite time of the year at the hotel is trimming up ready for Christmas and it’s fair to say that there is never a bauble out of place or a piece of tinsel trailing!  So once again join me in a celebratory toast to Tanisha…may your Christmas lights glow brightly and your festive functions go with a bang!

T’was the night before Monday!

T’was the night before Monday and all through the house,a creature was stirring, and it wasn’t a mouse.

His treat stick was finished and hung up with care, and he hoped that she’d notice and more would appear,

but mummy was nestled all snug in her bed, while visions of Starbucks did dance in her head.

Cwtched in her duvet, alarm stuck on snooze,

she tried to fend off the old Monday blues.

In a house in Bridgend another was waking, and three little children had just started shaking,

A glare from her eyes and a shake of her head, was enough to fill them with horror and dread,

She shouted instructions and gripes from the kitchen,

Oh come on, get moving your bedrooms need blitzen,

So up to the house tops in fear they flew, to tidy and dress and be ready for school.

From a house set in Swansea, another did stir, still half asleep and eyes all a blur,

She sipped on a cuppa and then pulled a face, to the bus stop she legged it at quite a fast pace,

Her thoughts filled with figures and numbers to crunch and dreading the milkshake for breakfast and lunch,

the pressure was on to process the wages, her PC was poorly and loading took ages,

her brow was all furrowed from the effort she made, but proudly announced that we all would be paid!!

So you readers I give you this gift of insight, into the lives of us workers on site,

As we forge ever onward to finish each task, in the shadow of this mighty building we bask, with figures and paperwork bravely we fight, happy Monday to all and to all a goodnight!!

Team Member of the Month – August 2011

Maria the Magnificent!

It’s time again for us to honour and reward the hard work and effort of one of our team here at The Dragon Hotel!  Sweeping away the rest of the competition, it was a member of the housekeeping department that cleaned up the accolade for this month!! A big congratulations goes to Maria Morgan whose elbows are always greased and ready for action as she diligently dusts and selflessly scrubs away all signs of the night before.. With never a moan or word of complaint she tackles toilets and labours over lobbies, she valiantly vacuums and bravely buffs banisters; it’s all in a days work for the marvellous Maria!

Maria hails from Fforestfach, where she lives with her daughter Lia and 2 dogs.  Her favourite colour is black.  Given the choice she would snog and marry David Beckham (wouldn’t we all ladies?) and avoid at all costs Russell Brand – claiming that he looks like he needs a good wash and hair brush!!

I’m sure you will all join me is saying “Well done Maria” for all your hard work and effort! You would certainly give Kim and Aggie a run for their money!!

The Dragon Hotel Visits Ffos Las

The Dragon Hotel hosted a table at Ffos Las on Thursday 28th July where we soaked up the atmosphere in the Bridals Restaurant.

We had a wonderful 3 course lunch with some of the best views over the racecourse, such a great way to spend the afternoon.

When it came time to place the bets on I have no knowledge on the favourites so I just go for the best looking  jockey but unfortunately that didn’t work in my favour!  However I did come up trumps on Race 2 when I won £25.00. But this was beaten by Helen from Unilever and she placed a £5.00 bet on her lucky number…………No 3 in Race 3 and it came in 1st where she collected her winnings of £100.00.

We all thoroughly enjoyed the day and I can recommend it to anyone who is thinking of taking a corporate trip there.

Photos of the event will be uploaded  to our facebook page, but here’s a sneak preview:

Easter Bunny Coconut Cake

In case you ever thought we had a bunch of tough guys here in the kitchen of The Dragon Hotel let’s set the record straight with their delightful contribution to Easter this year!

Please remember however, although they may not be tough, they are professionals so take care when trying this recipe out at home…

white-whole-body-easter-bunny-cakeEaster Bunny Coconut Cake:
350g of castor sugar
120g of margarine
200g Self Raising flour
1 tsp. baking powder
3/4 tsp. salt
250ml of  milk
5 egg whites
1 tsp. almond extract
75g dry, flaked coconut

Cream Cheese Frosting Ingredients:
450g cream cheese, softened
225g butter, softened
500g icing sugar
1 tsp. vanilla extract
Milk, as needed

Bunny Decorating Ingredients:
Flaked coconut (plain or toasted)
Colored coconut (for grass, etc., instructions at bottom)
Jelly beans or M&M’s for eyes
Candies and marshmallows for decorating the face
Construction paper or flattened, trimmed marshmallows for ears

Cake Instructions:
1. Preheat the oven to 350 degrees F / 180 degreed C and grease and flour two 9″ round cake pans.

2. In a large mixing bowl, cream together the sugar and shortening until fluffy and well mixed with an electric mixer.

3. In a medium mixing bowl, sift together your flour, baking powder, and salt.

4. Add dry ingredients, alternating with milk, to shortening mixture in three stages.

5. When mixed, beat on medium speed for about 2 minutes more.

6. Add the egg whites and almond flavoring. Beat another 2 minutes or so more. Stir in coconut.

7. Divide batter evenly among your two prepared pans.

8. Bake about 30 minutes, or until a toothpick comes out clean.

9. Let cool completely on wire racks before removing from pans.

Instructions for Frosting:
1. In a medium mixing bowl, cream together butter and cream cheese.

2. Beat in powdered sugar and vanilla extract. Add a very small amount of milk to thin if needed, half a teaspoon at a time.

Assembling your Bunny Cake:
1. Cut one cake layer in half. Place cut halves side by side, and cut a small wedge from both, about 1/3 way down the body. This separates your bunnies’ heads from their little bunny bodies. The cut wedges will be used as a tail.

2. To make frosting easier, place cut cake pieces in the freezer about an hour before frosting. This will keep the cut parts of the cake from coming loose as you frost.

3. Frost between each half of your layer cake and press together. Do the same with your tail pieces. Place bunny upright on a platter (you won’t be able to move him after he’s frosted) and attach his tail to the body with frosting. Frost outside of cake generously.

4. Press generous amounts of coconut (toasted or untoasted) all over frosted bunny. Use jelly beans or other candies for eyes and nose. If you want to add extra detail to your Easter bunny cake (your choice– simple is more elegant, but details are fun), add licorice strings for whiskers, mini marshmallows for teeth, and large marshmallows (cut them in half across the middle) for fluffy bunny “cheeks”.

5. To make ears, cut pink construction paper to shape and fan slightly. Or flatten a large marshmallow and trim it into an ear shape with scissors (this is easiest if marshmallow is chilled after flattening).

6. Surround your Easter bunny cake on a tray with green coconut grass and chocolate eggs or jellybeans, if desired.

Golden service gets the seal of approval from Lord Mayor

Lord Mayor of the City and County of Swansea, Councillor Richard Lewis with Brenda Porter and Catherine Garcia of The Dragon HotelFor many people reaching retirement age is a much-anticipated landmark, viewed with excitement and plans of putting your feet up.

But for one Swansea lady that’s been far from the case.

Now 82, Brenda Porter is still working as a waitress at the city’s landmark Dragon Hotel in a career that spans 50 years since the Hotel’s grand opening in 1961. Now as the Hotel celebrates its 50th birthday year Brenda has received a celebratory treat of her own.

After reading about Brenda’s exceptional service at the Hotel in the Evening Post, Lord Mayor of the City and County of Swansea, Councillor Richard Lewis invited Brenda along to a coffee morning to chat through her memories of the Hotel and Swansea over the last 50 years.

During her hour with the Lord Mayor, Brenda reminisced about the highlights of working at The Dragon Hotel, which have included working at the grand launch night in 1961, and serving the great and good of Swansea at the many charity and society events held at the Hotel.

Speaking of her invitation to meet with the Lord Mayor, Brenda said: “I had a truly wonderful time and was delighted to have had the honour to meet with the Lord Mayor and take tea in his office.

“I have thoroughly enjoyed all of my 50 years working at the Dragon Hotel, and it was lovely to chat about the memories that we both share and the events that we have both played a part in at the Hotel. It was lovely to sit and talk with someone who has such a great knowledge of Swansea and its people.”

Lord Mayor of Swansea, Cllr Richard Lewis, said: “Brenda is clearly a remarkable woman. To have quite literally been serving the people of Swansea as well as many thousands of visitors to our great city for 50 years is a wonderful achievement that should be celebrated.

“It’s amazing that Brenda was there on the opening night of the hotel back in 1961 and is still there today doing a fantastic job. She is a tremendous ambassador for Swansea.”
